Judy DeLorenzo was chronically ill for over a decade. This version of a plant-based diet was instrumental in her recovery. Now vibrantly well, Judy was inspired to write this cookbook to guide others on similar healing journeys.
No stranger to eating vegetables, Judy and her husband have been walking the organic gardening path in a big way for over thirty-five years. She finds joy in carefully stocking the pantry, refrigerator, and freezer with only wholesome, nourishing ingredients, and cooking meals from scratch. In the past, Judy was a vegetarian for ten years, and has been eating low-fat, plant-based without soy, corn, wheat, or yeast since 2012.
The recipes shared in this book stem from a lifetime of understanding plant foods from seed to plate. They are simply delicious, family friendly, and filled with healing herbs, spices, vegetables, mushrooms, and love.
Many of the 111 recipes include optional omnivore variations for those who still transitioning to plant-based eating, and also make meal preparation easier in a mixed-diet household. The result is everyone eats healthier and is satisfied. There are over fifty recipes without added oil; additional recipes can become oil-free by following the instructions for sauteing in broth.
Recipes are appropriate for experienced home cooks as well as novices. Many people who are chronically ill have brain fog, vision challenges, and fatigue. This was taken into consideration when creating the recipes and layout.
